I was just going to keep it simple, using a pre-prepared base and maybe two toppings… but one ingredient led to another and suddenly a simple pizza turned into rather delicious one. It all started with an olive and fennel pesto by Nicholas Vahe and mulberries. Both for sale at a fishstore called Fiskkompaní.
400 g spelt flour
4 tsp aluminium free baking powder (vínsteinslyftiduft)
4 tbsp olive oil
1-2 tsp salt
2-4 tsp oregano
200 ml warm water

Aspargus (didn’t find any fresh here way up north so I just used a canned one)
Mulberries (now that’s a rare treat here in Iceland)
Heat the oven to 200 C.
Boil the water.
Mix all the dry ingredients together. Then add the oil and the water into the mix.
Mix well using a big spoon.
Punch dough down and transfer to a lightly floured work surface.
Roll into desired shape and thickness.
Add toppings on to the pizza.
Throw it into the oven and bake for ca. 10-15 min.
Voilá – hope you like it!

I’m always on the lookout for something to put on my toast. Ages ago, long before I became a vegetarian, I bought hamp seeds. I had totally forgotten about them inside the kitchen cupboard until I found the package yesterday. After a little google search I found out that I could use hamp seeds in just about everything. Like so many recipes there are thousand of various versions of blackbean-brownies to be found on the internet. I browsed through many of them and combined what I liked the most.
I’ve been meaning to make dahl for a while now. If I remember correctly it’s one of the first pure vegan courses that I tasted (many many years ago), at a restaurant called Á næstu grösum, that still operates in Reykjavík (in case you visit Iceland one day). There are various versions of dahl recipes to be found on the internet, but I decided to use red lentils as a main ingredient and kind of mixed various recipes together. So here it goes
